Victory! This is the first year I’ve gotten my rhubarb to grow and not go directly into seed. That means rhubarb desserts! Bliss.
My first recipe I played with was a strawberry rhubarb crisp. This one is gluten-free and sugar-free. Yes, you heard that right.
This recipe is great at as the rhubarb slowly comes in, you only need a little because it is a single serving. It is so easy to put together.
This dessert is an S if you are on the THM plan.

- Preheat oven to 350
- Grease baking dish
- Chop fruit and mix with sweetener and dash of salt
- Pour in baking dish
- Combine butter and ½ tbsp of sweetener to almond flour
- Mix until crumbly, top fruit
- Bake for 30-40 minutes...until bubbly and top is slightly browned.
