My oldest LOVES pasta. He would eat it day and night if I let him. Seriously, all the time. But, he also loves his mama’s red sauce. He will drink it by the bowl.
He also loves meatballs, but I tend to not make them. Lame, I know. I think it is just something I think of as a dish my mom makes so I like to leave it to her. She makes awesome meatballs.
I always thought meatballs to be labor intensive, but they aren’t at all.
These Parmesan meatballs are baked in a pan lined with parchment paper so even clean up is easy.
I make a dozen meatballs from this recipe but if you are serving to little kids, it’s nice to make them smaller and get two dozen. (Just check the cooking time)
If you are a Trim Healthy Mama these are an S. I serve then with red sauce and spaghetti squash. So, so yummy!
Another tip to make the flavor really pop is to use fresh parm cheese. Grating parm is a pain, so I throw mine in my (affiliate link) Ninja blender and pulse, it ends up powdered just like the green can. 😉 It makes it easy to use.
Also, don’t forget about your spices. Good quality spices, like sea salt, freshly ground pepper and a good (affiliate link) oregano can make such a difference in the flavor. It’s worth the splurge. You can get a (affiliate link) pepper mill for just a few dollars and you will love it, I promise.
- 1 pound of ground beef
- ½ cup freshly grated/ground parm cheese
- ⅛ cup oregano
- 2 tsp garlic powder
- ½ tsp. sea salt
- 1 room temp egg
- Set oven to 375 degrees
- Line 9X13 pan with parchment paper
- Add all ingredients in a medium sized bowl and mix well with your hands
- Roll into balls
- Bake for about 30 minutes. The meatballs should be firm to the touch
So, as much as I imagined meatballs to time consuming and messy, but they aren’t at all! It feels good to make something my mom is known for as well. Your kids will love these.
