Why I stopped eating eggs (and a collection of more than 70 gluten/dairy/egg free desserts)

But, it seems, eggs and I don’t get along.

I have been working hard on balancing my system but was having difficulty  pin pointing some triggers. It never really occurred to me eggs would be an issue as they didn’t show up on my first allergy panel.

Then I had a second round of testing done and eggs were categorized as a ‘1’. (with a 3 being the most pesky on the rating scale) I decided to drop all of what was on my allergy testing sheet, which included eggs.

Life then got busy and I didn’t think much about it when one morning I finished up some of my boy’s scrambled eggs. That afternoon, I had a return of some symptoms. It seemed out of the blue to me as I had been feeling very good as far as my Hashi’s  symptoms had been.

The next morning, I had two eggs myself. By that afternoon, I was miserable with GI issues and anxiety. (Here is where the light bulb turns on!) EGGS!!! ARGH! For real!

At that very moment, I was through with eggs. (Well, except when I had some mayo forgetting there were eggs in there…and I paid for it!)

Sigh…I’m a slow learner. I know how rough some foods can be for someone with an autoimmune condition but I blissfully ignored most of it.

When I was talking to my mom after I swore off of eggs, she reminded me that growing up, I wouldn’t touch eggs. I hated them, like gag worthy even. When did that change?

It really didn’t. Over time, as I matured, I realized that eggs were good for me and I should eat them. I learned to eat them, first by dosing them with ketchup…then salsa...and then just salt and pepper. I learned to be able to eat them.

But, maybe if I had been more in tune with healthy eating and my body as a young person, I may have heard my body saying, “Don’t eat those…they are not for you!”

Even during my first pregnancy, when I had horrible all-day-nine-month-sickness, I was consumed with guilt because I could not eat eggs. My poor child will not properly develop if I don’t eat  a boat load of eggs each day. (Not really, he is as smart as a whip!) But, I felt GUILTY because I couldn’t go near an egg. 

So, the point of all this? There is not a one sized fits all diet plan that works for everyone. Yes, eggs are a super food…but not if YOUR body reacts to them! Listen to what your body is saying. Pay attention to those symptoms and try to pin point why they are happening.

I am learning to be egg free…baked goods seem to be the hardest adjustment. Sigh. Being gluten free and mostly dairy free with that, also throws a monkey wrench into most dessert recipes.

    You have an awesome list of recipes here. I passed a few I know I have to visit and try! I am sorry to hear that eggs cause you problems. My mom has issues with eggs too. I love eggs and I hate to think that maybe someday I could no longer enjoy them.

    I avoided eggs for years because they became known as fattening cholesterol balls. Then everyone came back around and said you need eggs for protein. For all of the studies and programs that are thrown at us every day, the best thing for anyone is what works best for you and what you will stick with as a permanent part of your lifestyle. If eggs don’t work, or if they do, the most important thing is to do what is best for your body!

    I’m not allergic to eggs, but avocados are another story. Guacamole made me sick one time as a small child, throwing up and such. I never really even like the thought of them. Then when I was 14 and at a restaurant with friends who were all eating avocados I felt pressured to eat them. I paid for it with green projectile vomiting that shot out of my nose also. So flash forward 20 years, my kids made me doubt that I was really ‘allergic’ to them and how did I really know if I hadn’t tried them as a grown up? Well let me tell you, within minutes of eating a small piece of avocado on sushi me and my green puke were back in the bathroom together.
    Now am I allergic in the swell up and die category? I don’t really know, my body won’t let it hang around long enough to find out. So I take that as a yes. And never again with the avocados.

    Great post! Until I did a Whole 30 I didn’t know dairy bothered me! It wasn’t until I reintroduced it that I realized I got sinusy and had a slight headache after consuming dairy. I haven’t completely given it up, but know at least when I choose to eat it I am aware there is a price to pay and avoid it much more than when I was clueless!

    I totally feel your pain. I used to be highly allergic to eggs and gave them up for years. I just took another food allergy test and I am not allergic anymore. The body does heal and can overcome these things.

    I had a severe allergy to eggs ( and a bunch of other stuff) as a kid took allergy shots for years and was then told to reintroduce all those things as a teen ager. It took 2 decades for me to LOVE omelets and scrambles but when I did I really did. Now I have hashi’s and on a very strict paleo diet no improvement. So I removed eggs too. What I need are some breakfast meal replacements for those beloved scrambles and omelets! But thanks for posting the “treat” recipes, I don’t do treats but about 4 times a year, maybe I can find something me and my non paleo co workers will both like for potlucks.

    Thank you for this fantastic list. We’ve recently had to put our son on an elimination diet taking him off of eggs, dairy and wheat along with a few other things. Anyway, this list is going to be a lifesaver for me. Honestly some of these things are so healthy I would use them for breakfast and snacks. I’m so glad I came across your website.
