Gluten Free Blueberry Muffins

My kids love muffins. Let’s be honest, me too! They are so easy to throw together. They are also great to put in the freezer so you have something quick to pull out for a morning when you are on the run. These gluten free blueberry muffins have become a favorite of ours.

Gluten free Blueberry Muffins

This recipe is pretty forgiving. While I use a (affiliate link) gluten free flour mix, rice flour with some xantham gum work just fine.

Fresh or frozen berries work. I have been known to used sliced strawberries as well. My kids love those! (Chocolate chips are a yummy sub too!)

A gluten free blueberry muffin recipe.
Ingredients
  • 1 stick of salted butter (Melted)
  • 2 cups of gluten free flour mix (Or 2 cups of rice flour with xantham gum)
  • ½ cup evaporated cane juice crystals
  • ¼ tsp. sea salt
  • 1 tbsp. baking powder
  • 1 cup milk
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 cup berries
Instructions
  1. Preheat oven to 375.
  2. Line or grease a 12 cup muffin pan
  3. Melt butter and set aside
  4. Mix milk, egg and vanilla until combined.
  5. Mix dry ingredients
  6. Add the melted butter, wet ingredients to dry ingredients and stir, do not over mix.
  7. Fold in berries.
  8. Spoon into muffin pan.
  9. Bake for 20-25 minutes, until the tops are a nice golden color.

    I have no idea what cane juice crystals are, is this for sweetening if so can I just use Stevia? The gluten free flour is that the supermarket type? Can we have that on the THM? Oh I’m finding this so confusing. I didn’t think we could have any flour unless it was their own blend. Please help me so far day three on the S plan and I’m really enjoying it but I do crave cake, oh and bread with lashings of butter……..I can do this

      Hi Lynnette! Sadly, this recipe is not THM. ALl of my THM recipes are marked. You can use almond, flax, and coconut flours in an S setting and you can use oat flour in an E setting. You can do this! It takes time, good luck!!
