Gluten Free Apple Cinnamon Muffin in a Mug

Yes, I’m addicted to playing with the muffin in a mug recipes!

There is something about the cool temperatures that make me want to bake. I will admit I have been doing less of that since becoming gluten free and even less with Trim Healthy Mama.

Gluten Free Apple Cinnamon Muffin in a Mug

Until I found that the muffin in the mug was doable in the oven. I also started making my own almond milk and use the leftovers to make almond flour, so I have plenty on hand.

And now, since we’re rolling into apple season, it only seemed right to try an apple MIM.

Don’t worry, this is still an S even with the small amount of apple, if you are a Trim Healthy Mama. A half an apple is an S helper in the book, you only use a tablespoon in this recipe.

The recipe is gluten and dairy free too, a nice change for those with sensitivities.

Gluten Free Apple Cinnamon Muffin in a Mug
  • 1 egg
  • 1 tsp. coconut oil
  • ½ tsp. vanilla extract
  • 2 tbsp. ground flax
  • 2 tbsp. almond flour
  • ½ tsp. baking powder
  • 1 tsp cinnamon
  • a dash of salt
  • stevia to taste (1 tbsp. of maple syrup works well too!)
  • 1 tbsp. finely chopped apple
  • 1 tbsp. chopped walnuts
  1. Beat your wet ingredients together.
  2. Add in the dry ingredients and mix well.
  3. Stir in apple and walnuts
  4. Put in greased baking dish
  5. Bake at 350 for about 18 minutes or until the top is firm

    Mmm! I haven’t really tried any “in a mug” recipes because we don’t use a microwave. I do have a toaster oven though and I don’t know why I’ve never tried individual sizes! Must try! Thanks for linking up on the Raising the Barrs FB page!

      I haven’t tried these yet in a bigger batch. I’d done a few others and I usually get two muffins in a regular sized tin per one MIM recipe, if that makes sense. Please let me know if you try it. :)

    Would this work with unsweetened applesauce? I seem to always have that around. Just measure the equivalent amount to equal the carb count in the apple portion? Thanks! Can’t wait to make this!

    Just tried this since I am on week 2 of THM. Very Yummy! For those of you that want to do it in the microwave. I did mine for 1 minute like all of their other muffin in a mug recipes. Also put 2 tsp of Stevia in for my sweetener. Thanks!

    I need something clarified. I thought this was a Muffin in a mug and it looks like the ingredients are but the directions don’t look like it matches up to making it in the microwave. am I looking at something wrong.
