Garlic Parmesan Chicken

One of my all time favorite aromas in a kitchen is the smell of sauteing garlic.

Pure.bliss. (Note if you do not love garlic, this recipe is not for you)

Garlic and Parmesan ChickenSeriously, if I run out of garlic, my kitchen closes down. I don’t know how to cook with out. (Okay, I’m a tad bit exaggerating but this Italian girl loves her garlic!)

This recipe is quick and simple….but it feels like you are eating out. It doesn’t take fancy skills or lots of expensive ingredients to make a great dish.

Garlic Parmesan Chicken is good enough to stand alone but is wonderful over pasta. Or, if you are gluten-free, like me, try it over zucchini noodles. This (Amazon link) tool to make ‘zoodles’ has been worth the investment. I use it several times a week.

You can also vary the amount of garlic you use, but like I said, I love garlic so I use a lot. My husband got me this (Amazon link) gadget to mince up garlic and I use it over my garlic press any day.

Garlic Parmesan Chicken

Ingredients
  • 3 tbsp. butter
  • 6 cloves minced garlic
  • 2 chicken breasts-chopped into bite size pieces
  • sea salt
  • ¼-1/2 cups parm cheese
  • 2 cups spinach
Instructions
  1. Saute garlic in butter for a minute or two
  2. Add chicken pieces, salt, and cook until no longer pink in the middle.
  3. Make sure to stir chicken to coat with butter and garlic
  4. Add parm cheese and stir until the chicken is coated.
  5. Add spinach and cook until wilted
  6. Serve by itself or over pasta or zoodles

    I honestly love garlic anything. I love the aroma it puts off when it cooks and it gives food a yummy flavor. Plus, it has plenty of health benefits. Your recipe looks delicious!

    I just made this today. We loved it!!! My husband’s only critique was that he wanted more spinach in it since we both adore spinach. So, next time I’ll add some more spinach but this was a sure-fire hit! I’ll be making this again for sure!

    Just had to comment. and i never leave a comment…. My husband and 17 year old son thought this was absolutely the best recipe ( paleo or otherwise) i have made!!! I made it over Zucchini noodles for my husband and me, and rigatoni for my son. The hubby said he will never eat “zoodle” any other way!! Thanks so much for a terrific and easy recipe!!

    Just made this for dinner tonight..OMG..this is so delicious!!! I added portobello mushrooms that I sauted separately in olive oil and a bit of garlic. Thanks for sharing..my family is going to love it!

    Just made this tonight! Very delish! I used my cast iron and it was absolutely fantastic as it really helped brown the butter which set the dish off for sure! I served with spaghetti squash! Oh and I used frown spinach bc I had it on hand and it tasted just fine.

    This looks like a great skinny meal. Just wondering if I made it double to have leftovers how would it be with the spinach? Would it be soggy warmed up again or not, thanks!

    Do you have to use sea salt or would regular salt suffice? Any news on how this would reheat later..will the spinach become soggy?

    Made this for an early dinner today and my husband loved it. We both love garlic so this was just perfect. I also put this dish on top of a bed of zucchini noodles. I used light butter and lots of garlic. I will try it with kale and spinach next time.
    Where can we find the nutrition/calorie information?

      So glad you liked it. I don’t have the nutritional information done for this one but I do like using My Fitness Pal to do that kind of work. You can loads the ingredients in there.

    Hello, I’m a fellow garlic lover and I cannot wait to make this!! I am in the UK so we don’t use “cups”, I wondered if you knew roughly how much spinach and parmesan to use in grams? Every US to UK cooking measurement converter I have found seems to tell me different things :( Thanks so much x

      Love GARLIC! :) For parm, I’d say roughly 60 grams is about a half a cup, that’s guessing from packaging. Sigh…for the spinach, I’d honestly just throw a few hand fulls of it raw in the dish. (I’m not always exact around here!) I hope that helps you.

    Hey, this was pretty tasty, but I did halve the garlic.
    Also, wasnt sure if this was noted in the other comments, but when I added the parmesan, it stuck into a giant glob in the bottom of the pan.
    I would recommend plating the dish and then sprinkling parmesan over top … just my two cents!

      That for sure will work for the parm. I’ve never had it glop up on my but I know sometimes that can happen with others things I do similar to this recipe. I’m glad you liked it. :)

    I made this tonight for the family. My oldest was a youth group and there was barely enough for the four of us (thank god he was out or we would of all been left hungry). It was delicious we ate it all. I added sun dried tomatoes along with some shallots. It was amazing even my 13yr old son asked for seconds and he never asks for seconds. Thank you again for sharing.

    I am trying to eat healthier but I love everything in this recipe. What not to love, garlic, chicken, cheese Nd my newest favorite spinach. Instead of butter I used olive oil and irate this on the side of fresh veggies. It was very filling and something I will definitely cook again. Thanks for sharing.

    I want to make this for dinner and serve over penne pasta, is there enough juice from the garlic and oil for a sauce over the pasta so it’s not completely dry?

      You might need a touch more oil…or what I do is toss my pasta in butter enough so it is nice and wet and then pour the chicken over it.

    Yummy!! My family noticed this recipe was a bit “dry.” Adding a bit of olive oil to the final product seemed to resolve that. Thanks for posting!
