Gluten Free Peanut Butter Cookies

A gluten free peanut butter cookie.
  • 1 stick of softened butter
  • ¾ cup of natural peanut butter (not added sugar)
  • ¾ cup of evaporated cane juice crystals
  • 1 egg
  • 1¼ cup gluten free flour mix
  • ½ tsp baking powder
  • ¾ tsp. baking soda
  • ¼ tsp. sea salt
  1. Pre heat over to 375
  2. Mix butter, peanut butter sugar and egg with mixer.
  3. Stir dry ingredients together
  4. Add the dry ingredients to the butter mixture and stir
  5. Roll dough into balls
  6. Flatten with a fork (You may need to dip the fork in flour)
  7. Bake for 12 minutes.
  8. Makes about three dozen cookies
