Gluten Free Pumpkin Spice Muffin in a Mug

A perfect fall treat
Ingredients
  • 1 egg
  • ½ tsp. vanilla extract
  • 1 tsp. coconut oil
  • 1 tbsp of pureed pumpkin
  • 2 tbsp ground flax
  • 2 tbsp coconut flour
  • ½ tsp. of cinnamon
  • a dash of ground cloves
  • a pinch of salt
  • Stevia to taste (If you are using this for your kids, use 1 tbsp. of maple syrup)
  • 1-2 tbsp. of cream cheese
Instructions
  1. Mix wet ingredients (except cream cheese)
  2. Add in dry ingredients
  3. Put half of batter into greased dish
  4. Layer in the cream cheese
  5. Top with the rest of the batter
  6. Bake at 350 for 12-17 minutes
