Creamy tomato and spinach soup is a delicious and nutrient dense food. This soup makes the perfect lunch to help fuel your kid’s growing bodies.

Soup is a staple here because it’s easy, cost effective and I know I’m feeding my kid’s a healthy meal. I love to make big batches and stash them in the freezer too. There is nothing like knowing you’re covered when your day gets away from you.

While this soup isn’t the prettiest, (tomatoes + spinach= brown!), it is packed with nutrient dense foods to make a great meal. Not only does it have the veggies, it has a scoop of (affiliate link) collagen for protein, bone broth for minerals and gut healing and a good amount of cream and butter as a healthy fat and to help assimilate those veggies. Plus a good bit if (affiliate link) sea salt to help out those adrenals. This soup is a win!

If your kids aren’t veggie lovers, cut down the spinach and throw in some grated carrots. This will add sweetness and get them used to the ‘green’ taste of spinach. My kids are veggies eaters and totally down this soup.

You can also easily make this soup dairy free but using a different oil to cook with and using almond milk instead of cream. It will still be full of flavor.

My husband enjoys this soup as well. If you like to send leftovers to work, then you need to invest in this (affiliate link) awesome little crock pot. It works well and I can pack it the night before. Then my husband has a healthy lunch that he doesn’t have to heat up in a microwave.

Creamy tomato and spinach soup
  • 3 cups tomato juice
  • 1 cup of heavy cream
  • 1 cup of chicken broth
  • 1 small can of tomato paste
  • 1 onion chopped
  • 2 stalks of celery chopped
  • 4 cloves of garlic chopped
  • 2 cups of spinach
  • 1 scoop of collagen (about two tbsp.)
  • 4 tbsp. butter
  • 1 tsp. sea salt
  • pepper to taste
  1. Put butter, onion and garlic in the pan and cook until a light brown
  2. Add the spinach and mix in until wilted
  3. Put everything in the blendtec blend and turn on soup mode*
  4. *If you don't have soup mode, just mix until smooth and add back into the pan to heat up

I also have to tell you this is the FIRST recipe I made in my  (affiliate link) Blendtec blender and whoa! I was kind of blown away that I could make soup in a blender. The only heating I did was to brown the onions, garlic and celery in the butter a bit because I like the flavor. Then I whirled everything on the soup setting and I had a warm dish.

I am a previous vitamix owner so I’ll be doing a full review of how the Blendtec compares and so far I am loving my Blendtec!

    This sounds really yummy, but I wonder if I might add some turmeric. It will add to the nutrition and will yellow the soup up some, which might be more attractive.

    Tomato soup and grilled cheese sandwiches are one of my all time favorite comfort food dinners. I like that this soups is a healthier alternative than the Campbell’s soup I usually buy. Spinach is one of my favorite veggies and one I can actually get my kids to eat!

    This soup looks really good. I love soup, but it is hard to get my family to eat it unless it is chunkier, like stew. They tend to turn their noses up on anything too pureed or smooth, but maybe I can sneak this in!
