Breakfast ‘biscuits’ (gluten free/low carb/thm)

Let’s talk breakfast! First off, I am NOT a morning person. Not one bit. I was told when I got older that would change, it has not.at.all, friends.

This makes breakfast challenging some days because I like slow mornings. However, my kids pretty much say they are starving as soon as they roll out of bed.

It’s also really important to eat breakfast at least 30 minutes after you get up. This helps keep your blood sugar levels stable as well as supporting your adrenals. (And don’t reach for that cup of coffee first, let’s get some food in your belly!)

Since I don’t ‘do’ mornings, I like easy breakfasts. I like things I can get together the night before.

These breakfast ‘biscuits’ are so easy to mix together the night before and then you can just throw them in the oven when you get up in the morning.

I like to bake these on this (affiliate link) cookie sheet, but I put parchment paper down first to contain the grease a bit. (I’m lazy like that)

This recipe is gluten free and I can guarantee your friends won’t notice so this will make a nice addition to breakfast with company even.

Ingredients
  • 1 pound of breakfast sausage
  • ½ cup shredded cheddar cheese
  • 1 egg
  • ¼ cup of almond flour
Instructions
  1. Preheat oven to 425
  2. Line a rimmed baking sheet with parchment paper
  3. Mix all ingredients together, I do this by hand
  4. Make mixture into patties and place on baking sheet
  5. Bake for about 20-30 minutes, the patties should be firm and the grease from the cheese should be seen

As you can see this is easy peasy for those of us that don’t function well in the morning.

    The sausage and cheese breakfast biscuits look great! Do you brown the sausage prior to adding to the cheese/almond flour mix?

    Are you scrambling this ground beef and draining off the fat before you add it to this recipe. Just need a little more specifics.

      I just mix all together, kind of like you do for meatloaf or meatballs. It is a bit ‘watery’ but it holds together just fine. I hope that helps.

    I’m excited to try these because my breakfast choices are extremely limited as I don’t like eggs and I can’t eat oatmeal due to an inflammatory reaction. I browned my turkey sausage first so I’m thinking it will not turn out like your pictured but after reading the comments, I’ll make them again using uncooked turkey sausage. Thank you!

    These are a wonderful recipe! Love that they are so high in protein but still have some carbs as well. Definitely I need to try this. My kids would love it and they would love being fed on the sooner side after waking up! Good point.

    These taste great and very easy, only problem is that I had to finish the last 10 minutes on top of the stove. My smoke alarm jet going off!

      Oh yikes! I’ve never had that happen but some times grease can be tricky. You can also try adding more almond flour to soak up some of the oil.

    Best recipe I’ve found in a long time! Mine ended up a bit different because I didn’t read the ingredients carefully and was so excited to make them. I used GF turkey sausages. I cooked them first, then chopped them up. The recipe only needs 4 sausages for the that way and they were great!. I’m gonna try turkey bacon next time. Thank you! I will be sharing with everyone.

    I’ve had this recipe pinned for a long time and finally made them this morning. I wish I would have realized how incredibly easy and delicious they were!! My entire family loved them and I will share the recipe with my mom as well…she is trying to do THM but isn’t fond of recipes with lots of ingredients. I’m sure she’ll love this one!
