One of my favorite tastes of summer happens to be a good balsamic cucumber salad. My aunt used to make a version of one when I was growing up and I think we had it just about any time we got together over the summer.
Fresh veggies, I think, go hand in hand with summer. My kids get so excited when they see farm stands and gardens. It makes my heart happy…even our cat loves them.
This salad is easy to make and adjust to your family’s taste. But, some times simple is good and despite not many ingredients, this is always a hit when served.
And apparently, if you make a veggie into a ‘noodle’ it is irresistible for kids, well at least mine any way. (They are veggies lovers, though!) For real, my oldest, literally drinks the dressing out of the bowl, it’s so good. (He even asked for a straw the one day!)
I also have to admit I got a new little toy to specialize veggies and thought it would be way fun to do that with this recipe. However, if you don’t have a gadget like this (affiliate link) one, just slice those cukes and it will still be wonderful!

- 3 cucumbers (spiraled or sliced)
- 2 chopped tomatoes
- Balsamic vinegar dressing
- sea salt and pepper to taste
- Parm cheese
- Add your veggies to a bowl and toss with dressing.
- Add salt and pepper to taste.
- Let chill in refrigerator for an hour before serving
- Sprinkle with parm cheese.
